How we choose every bottle

No industrial catalogue, no algorithm: a hand-picked selection, bottle by bottle, by people who know the winemakers behind the labels.

What a bottle must prove to enter the cellar

Vines farmed cleanly

We select wines from organic, biodynamic or natural farming. That is the baseline: no synthetic chemicals in the vineyards we stand behind.

A craftsman behind the label

Only independent, human-scale winemakers we know personally. No brands, no industrial negociants.

The glass before the pitch

A cuvée only makes it onto the shelf if it convinced us glass in hand. A spec sheet is never enough: the tasting decides.

A story worth telling

Every bottle is chosen for its story, its terroir and the passion of the winemaker who created it — that is what we pass on at the counter.

From the encounter to the shelf

The selection is led by Guillaume Noël, co-founder and wine merchant of L'Amicale: tasting, oenology, biodynamic and natural wines, French wine regions — this has always been his home ground.

That fieldwork built direct relationships with the estates, up to securing the exclusive distribution of several of them in Toulouse. When we truly believe in a cuvée, we commit to it.

Every reference is then documented in “La Bible”, our in-house catalogue: the estate's history, the terroir, the pairings we genuinely recommend. No copy-pasted supplier sheets.

Finally, the online catalogue is synchronised with the shop: the prices and availability you see on this site are the cellar's own, updated automatically with every change.
